Mediterranean Olives

Ingredients
  

  • 400g pickled olives, mixture of black and green
  • 5 cloves garlic, large, finally chopped
  • 2 tbsp chives, finally chopped
  • 1 tsp fennel leaf, finally chopped
  • 1/4 cup olive oil
  • grated zest from 1 orange
  • 1 tsp fresh thyme leaves
  • 1 small chilli, chopped fine (optional)
  • 1 tsp Himalayan fine salt

Instructions
 

  • Rinse the brine off the olives
  • Place in a jar, and add all of the other ingredients
  • Leave in the fridge for at least 1 day before serving
