Mediterranean Olives
Ingredients
- 400g pickled olives, mixture of black and green
- 5 cloves garlic, large, finally chopped
- 2 tbsp chives, finally chopped
- 1 tsp fennel leaf, finally chopped
- 1/4 cup olive oil
- grated zest from 1 orange
- 1 tsp fresh thyme leaves
- 1 small chilli, chopped fine (optional)
- 1 tsp Himalayan fine salt
Instructions
- Rinse the brine off the olives
- Place in a jar, and add all of the other ingredients
- Leave in the fridge for at least 1 day before serving
