Lemon Bars


  • 1 1/2 cups cake flour
  • 1/4 cup raw honey
  • 1/3 cup coconut oil, melted
  • 1 pinch salt
  • 6 eggs
  • 1 tbsp lemon zest
  • 1/2 cup lemon juice
  • 1/3 cup raw honey
  • 1 pinch salt
  • 4 tsp coconut flour


  • Preheat the oven to 180°C. Line a square tin with parchment paper, set aside.
  • In a large bowl, combine flour, honey, coconut oil and salt. Mix till combined. Press this mixture into the baking tin and bake for 20 minutes or until golden brown, leave to cool completely.
  • Combine the eggs, lemon zest and juice, honey, salt and coconut flour in a medium bowl and whisk until smooth. Pour this mixture over the crust and bake for 30 minutes. Let the bars cool completely before chilling in the fridge for at least 4 hours.
  • Remove bars from the fridge and cut into 16 squares.
