Halloumi, basil pesto and roast tomato Bulgar wheat salad

Ingredients
  

  • 2 cups cooked Bulgar wheat
  • 1/3 cup basil pesto
  • 1 cup cherry tomatoes
  • 2 rings Halloumi cheese
  • handful of fresh basil leaves
  • handful of cashew nuts, or nuts of choice

Instructions
 

  • Heat olive oil in a pan and fry the cherry tomatoes until blistered. Set aside.
  • Now fry the hallioumi cheese cubes till crispy and done.
  • Mix the cooked Bulgar wheat and pesto and dish into a serving bowl.
  • Top with the fried tomatoes, fried halloumi, fresh basil and nuts.
