Halloumi, basil pesto and roast tomato Bulgar wheat salad
Ingredients
- 2 cups cooked Bulgar wheat
- 1/3 cup basil pesto
- 1 cup cherry tomatoes
- 2 rings Halloumi cheese
- handful of fresh basil leaves
- handful of cashew nuts, or nuts of choice
Instructions
- Heat olive oil in a pan and fry the cherry tomatoes until blistered. Set aside.
- Now fry the hallioumi cheese cubes till crispy and done.
- Mix the cooked Bulgar wheat and pesto and dish into a serving bowl.
- Top with the fried tomatoes, fried halloumi, fresh basil and nuts.
