Sundried Tomato Pesto Pasta Salad

Ingredients
  

  • 500g penne pasta
  • 1 cucumber, diced
  • 1 red pepper, diced
  • 1 red onion, diced
  • 1 cup Kalamata olives
  • 1 cup cooked chickpeas
  • 1 cup sundried tomatoes in oil
  • 1 cup fresh basil leaves
  • 1/2 cup raw cashew nuts
  • 1/2 cup feta cheese
  • 2 cloves garlic
  • 1 lemon's juice
  • 1 tsp dried oreganum
  • 1 sprigfresh rosemary
  • 1 tsp salt
  • 1/2 fresh chilli, chopped
  • some extra olive oil, if needed

Instructions
 

  • The sauce: Add sundried tomatoes, basil, cashews, feta, garlic, lemon juice, oregano, rosemary, salt and chilli to a blender and blitz till smooth, adding extra olive oil if needed.
  • Make the pasta according to packet instructions.
  • In a large bowl, put together the pasta, along with the cucumber, bell pepper, red onion, chickpeas and olives.
  • Add the pesto on top and toss till combined. Garnish with extra cashews and fresh basil. Serve and enjoy!
