Sundried Tomato Pesto Pasta Salad
Ingredients
- 500g penne pasta
- 1 cucumber, diced
- 1 red pepper, diced
- 1 red onion, diced
- 1 cup Kalamata olives
- 1 cup cooked chickpeas
- 1 cup sundried tomatoes in oil
- 1 cup fresh basil leaves
- 1/2 cup raw cashew nuts
- 1/2 cup feta cheese
- 2 cloves garlic
- 1 lemon's juice
- 1 tsp dried oreganum
- 1 sprig fresh rosemary
- 1 tsp salt
- 1/2 fresh chilli, chopped
- some extra olive oil, if needed
Instructions
- The sauce: Add sundried tomatoes, basil, cashews, feta, garlic, lemon juice, oregano, rosemary, salt and chilli to a blender and blitz till smooth, adding extra olive oil if needed.
- Make the pasta according to packet instructions.
- In a large bowl, put together the pasta, along with the cucumber, bell pepper, red onion, chickpeas and olives.
- Add the pesto on top and toss till combined. Garnish with extra cashews and fresh basil. Serve and enjoy!
