Pampoen Koekies - gluten free/sugar free

Ingredients
  

  • 1 1/2 cups cooked and mashed pumpkin
  • 3/4 cup gluten free rolled oats, cut a bit finer in the blender or Nutribullet.
  • 2 eggs
  • 1/2 tsp baking powder
  • 2 tsp honey
  • 1 tsp cinnamon powder
  • a splash of milk or milk alternative is needed

Instructions
 

  • Blend all ingredients together in your blender or Nutribullet, with a splash of milk or milk alternative if the batter is too thick.
  • Heat up your non-stick pancake pan on medium heat, and fry about a tablespoon worth of batter per pumpkin cookie. Fry till golden brown on the outsides.
  • Serve warm with extra honey and fruit, with some more cinnamon powder sprinkled on top!
