Pampoen Koekies - gluten free/sugar free
Ingredients
- 1 1/2 cups cooked and mashed pumpkin
- 3/4 cup gluten free rolled oats, cut a bit finer in the blender or Nutribullet.
- 2 eggs
- 1/2 tsp baking powder
- 2 tsp honey
- 1 tsp cinnamon powder
- a splash of milk or milk alternative is needed
Instructions
- Blend all ingredients together in your blender or Nutribullet, with a splash of milk or milk alternative if the batter is too thick.
- Heat up your non-stick pancake pan on medium heat, and fry about a tablespoon worth of batter per pumpkin cookie. Fry till golden brown on the outsides.
- Serve warm with extra honey and fruit, with some more cinnamon powder sprinkled on top!
