Pampoen Koekies - gluten free/sugar free


  • 1 1/2cupscooked and mashed pumpkin
  • 3/4 cupgluten free rolled oats, cut a bit finer in the blender or Nutribullet.
  • 2eggs
  • 1/2tspbaking powder
  • 2tsphoney
  • 1tspcinnamon powder
  • a splash of milk or milk alternative is needed


  • Blend all ingredients together in your blender or Nutribullet, with a splash of milk or milk alternative if the batter is too thick.
  • Heat up your non-stick pancake pan on medium heat, and fry about a tablespoon worth of batter per pumpkin cookie. Fry till golden brown on the outsides.
  • Serve warm with extra honey and fruit, with some more cinnamon powder sprinkled on top!
